Biggest Loser Chocolate Peanut Butter Fudge!

This is a “diet” recipe” and it is really delicious.  This fudge is a great way to slim down and still have this guilt-free treat.
  
 Ingredients:
      2 oz chocolate, at least 50% cocoa
      2 Tabs fat-free evaporated milk
      2 Tabs. Powdered peanut butter such as PB2
         Dash vanilla extract
 Directions:
Melt chocolate in a double boiler. Warm the milk in a small saucepan. Stir in PB2 and vanilla.  Slowly add melted chocolate until it is fully incorporated and smooth (Do not let mixture boil, or cocoa butter will separate from chocolate).  Pour mixture into a small dish, lined with parchment paper and spread fudge mixture fairly thin.  Chill until set, then cut in 2” squares.  Serves 4.
