This is a recipe I used to make with my fifth- grade class. We would make these pops in the morning and have a nice relaxing cool snack in the afternoon. They are low in calories, healthy and inexpensive (for a classroom of kids, I would make many “batches” of this recipe. *See below).
2 cups bite-sized pieces fruit, such as pineapple, chunks, diced mango, grapes and all kinds of berries. 1-2 cups coconut water.
Arrange pieces of fruit in 4-6 oz. paper cups, making sure the fruit pieces fit snuggly. Add enough of the coconut water to just cover the fruit.
Insert ice-pop sticks and freeze until solid, at least 5-6 hours. This recipe makes 8 pops. *So, if you have a class of 32 kids, then you would increase the ingredients 4 times: 4-8 cups coconut water, and 8 cups of mixed fruit. Very cool, healthy, and delicious, and it won’t spoil supper!
