Soon we will be in apple season. When we go shopping, we will see bins of apples with names we never heard of before. Which ones should we choose to make a pie, or use for an apple cake? Those are the questions! To make the process of selection a little easier, here is a short list. This list was taken from a Julia Childs’ cookbook. Who knows better than Julia Childs! Making a salad: choose Cameo, Cortland, Empire, Fuji, Gala, Ginger Gold, Golden Delicious, Granny Smith, Honeycrisp, Jonagold or Red Delicious. Sauteing: choose, Braeburn, Empire, Fuji, Gala, Ginger Gold, Honeycrisp, or Newtown Pippen. Sauteing is the French word for lightly frying. Take a little bit of butter and salt, add the apples and gently cook the apples until soft. Roasting: choose, Cameo, Cortland, Golden Delicious, Granny smith, Idared, Jonagold, Jonathan, or Rome Beauty. These apples would be used for baked apples. Baked apples are a perfect desert on a cold autumn day.
