Honey-Mustard Yogurt Dressing
This is a great cool dressing for your late summer salads. Whisk together ¾ cup plain Greek Yogurt, ¼ cup mayonnaise, 1 Tbsp. olive oil, juice of ½ lemon, 1 Tbsp Dijon mustard, 2 Tbsp. honey, ½ tsp coarse salt, pepper to taste and pinch of cayenne. Enjoy! Weight Watcher’s recipe.

Health advocates say they add Chia seeds to oatmeal, salads, yogurt, and even pizza! They say it really improves their hair and nails. And, they are packed with nutrients. Paleo Colada Pops
This is a recipe I used to make with my fifth- grade class. We would make these pops in the morning and have a nice relaxing cool snack in the afternoon. They are low in calories, healthy and inexpensive (for a classroom of kids, I would make many “batches” of this recipe. *See below). 2 cups bite-sized pieces fruit, such as pineapple, chunks, diced mango, grapes and all kinds of berries. 1-2 cups coconut water. Arrange pieces of fruit in 4-6 oz. paper cups, making sure the fruit pieces fit snuggly. Add enough of the coconut water to just cover the fruit. Insert ice-pop sticks and freeze until solid, at least 5-6 hours. This recipe makes 8 pops. *So, if you have a class of 32 kids, then you would increase the ingredients 4 times: 4-8 cups coconut water, and 8 cups of mixed fruit. Very cool, healthy, and delicious, and it won’t spoil supper!
